I know of two Easter eggs on the "Shark Tale" DVD, and I'll describe below how you can find them.

For the first egg, at the main menu, highlight "Scenes" and press the left arrow button on your DVD remote. The no left turn icon will be highlighted. Press Enter, and you will gain access to the "Shark Tale" color script. This is basically a series of color stills that help guide the animators.

The second egg can be reached by two different paths, and I'll give both of them.

Path 1: At the main menu, highlight "DreamWorks Kids" and press Enter. At the next menu, highlight "Rock the Reef" and press Enter. At the next menu, highlight "Sykes' Jukebox" and press Enter. At the Sykes' Jukebox menu, highlight "More" and press the left arrow button. The color of the whale icon at the lower right of the screen will change from gold to white. Press Enter, and you will gain access to thumbnail character bios for Lola, Lenny, Oscar, Angie, Ernie & Bernie, Ira Feinberg, Don Lino, Frankie, Luca, and Sykes.

Path 2: At the main menu, highlight "Special Features" and press Enter. When the next menu appears, press the down arrow button five times to highlight "More" and press Enter. At the next menu, press the down arrow button three times to highlight "Cast" and press Enter. At the Cast menu, press the down arrow button six times to highlight "Special Features." Press the right arrow button, and red stars appear over the seahorse's head. Press Enter, and you will gain access to the same thumbnail character bios mentioned in the preceding paragraph.
